The documented direct-build setup omits creation of a required RPM overrides directory, causing fresh-checkout builds to fail.

Adds a parallel Tailor workspace for Trident test images as step 6 of the migration stack, leaving the legacy build flow in place until later cutover PRs.
Changes:
- Defines the workspace, toolchain, signing defaults, and base-image catalogue.
- Adds AMD64/ARM64 test-image configurations and a functional-test image.
- Introduces shared assets and direct-build documentation.
