Introduce the processor, dataset config, STRING species plumbing, and grid-search thresholds, and point the HuggingFace revision at the snapshot that contains the tuberculosis files. Smoking and k-fold changes are left out of this branch. Co-authored-by: Cursor <cursoragent@cursor.com>

Summary
This is stacked on #128 because smoking and tuberculosis share the same HuggingFace revision and download CLI. Unrelated notebooks, experiment fixes, and later k-fold changes from #122 are excluded.
