Make the Dropdowns more responsive

We still have this weird selection bug still occurring when we switch between drop-down menus. Fix this to be more responsive. May need rewrites of some of the Jekyll voodoo.

Looking into a webcomponents solution as this can kill two birds with one stone. Basing a new component off this existing one, but giving it the ability to pull info from local data sources, rather than just external APIs
