Use the mascot as the README logo

What and why

The README header still showed the old icon after the redesign in #69. docs/assets/logo.png is now a 256px copy of apps/web/public/mascot.png, the same image the site uses.

How this was verified

Checked the file is 256px with a transparent background, and viewed the README on this branch on GitHub.
