feat: Remove git, gh, and all rendering deps from dockerfile - #15

Re-add `git` to pixi.toml to use conda. This is because ffmpeg has zlib version restrictions, thus can conflict with git. The rendering deps were there initially because we were traying to X forward visualizations.
