docs: production-first README and release install script - #6

Rewrite the Italian README around installing com.paca.gitlab from GitHub Release assets into Paca named volumes and the admin plugins API. Add scripts/install-from-release.sh for a copy-paste-friendly prod path; keep local/dev as a short pointer to install-local-plugin.sh.
