docs(skills): sync protobuf-expert and protoc-gen-mcp skills to EasyP v1 - #238

The vendored protobuf-expert-skill still described the intermediate v1.0-rc format (`direct (...)` in protobuf.mod), while the v0 configuration inside it was unchanged. Replace both vendored skills with their v1 upstream versions: - easyp-tech/protobuf-expert-skill 1.0.0: v1 file model, plus a v0 → v1 migration procedure built on `easyp migrate`; - easyp-tech/protoc-gen-mcp-skill 0.4.0: v1 example configs with protoc-gen-mcp v0.7.1.
