fix: patch Prom anyOf serializers when interfaces extend Parsable - #212

The first anyOf postgen pass missed Kiota models like `export interface Prom_query_data extends Parsable`, so clientgen still failed generate-docs. Add an explicit Prom_query_data.result rewrite and teach the general matcher to handle extends + type aliases. Co-authored-by: Cursor <cursoragent@cursor.com>
