Summary

Sync CODEOWNERS and maintainers.yaml with the actual cozystack team.

The current files contain a large number of stale entries inherited from the dot-project template (controller-tools, kubeapps and unrelated kubernetes contributors) that have no relation to cozystack. This PR removes them.

Compared to #2, this PR additionally retains active Aenix contributors that hold the maintainer role on this metadata repository and on cozystack/cozystack, but are not listed in cozystack/cozystack/MAINTAINERS.md:

Closing in favor of #2, which is the CNCF-initiated PR we are coordinating with the CNCF project team.

Thanks for the cleanup intent — the up-to-date roster (8 active maintainers, matching MAINTAINERS.md after the recent Emeritus transitions) is already applied in #2 via an additional commit.

Note for future reference: the CNCF .project repository tracks project maintainers as defined in MAINTAINERS.md, not the broader Reviewer / Approver pool from the engineering team. The dot-project utility schema only supports the project-maintainers team.
