Bugfix: Zettelrobbe lacked a custom field type which exists in paperless-ngx called longtext. this code provides that datatype.
Bugfix: Don't cut LLM results artificially before digesting them.
Refactoring: move code to cope with paperless-ngx enumerables into dataProcessingUtils.js
