Add Redis exporter and tidy monitoring/configs - #19

Add redis_exporter to docker-compose and Prometheus: new redis_exporter service, expose 9121 and a redis scrape job in prometheus.yml. Fix nginx_exporter command quoting in docker-compose.monitoring.yml. Clean up monitoring docs and provisioning: remove legacy alerting and grafana docs (alerts.md, grafana.md, logs.md, grafana/provisioning/alerting/alerts.yml) and update monitoring/README.md with minor formatting tweaks and a Grafana community dashboards table. Simplify blackbox config (remove incidental comments) and trim/comment-clean nginx site configs to remove explanatory blocks while keeping the nginx stub_status server for Prometheus scraping. Add .claude/settings.local.json containing local permission entries.
