BE-001 — Environment variable validation with schema

Description

Validate env vars at boot (PORT, DATABASE_URL, SUPABASE_URL, SUPABASE_SERVICE_ROLE_KEY, JWT_SECRET, STELLAR_NETWORK, STELLAR_HORIZON_URL, ANTHROPIC_API_KEY) so the app fails fast with clear messages.

Acceptance criteria

• App refuses to start with missing/invalid env; error lists each offending variable.
