docs: add Eureka installation guide with screenshots

Self-contained installation guide extracted from internal email.
Includes 5 annotated screenshots covering PowerShell setup, M365
Connector extension, Graph Explorer sign-in, and Eureka connector
toggle. Same visual theme as index.html.
