Subject: [PATCH] ci(desktop): build only on macOS for now (drop Linux compile
 job)

macOS is the only shipped target, so run just the osx bundle. The Linux
compile-validation stage is removed for now; the macOS bundle still compiles
src-tauri via `tauri build`, so the Rust bridge stays covered. Re-enable by
reverting when a Linux/universal target is on the roadmap.
