docs: show clang 21.1.8 in the sample reports

The Thread Comment and Step Summary cards show a sample Cpp-Linter Report. They used `v21.1.0`, the patch release of the static binaries. On `ubuntu-latest` the action installs clang 21 with apt, which is 21.1.8, and a test run on cpp-linter/test-cpp-linter-action-private printed `clang-format (v21.1.8) reports:` and `clang-tidy (v21.1.8) reports:`. The cards now show the version most users see.

Other mentions of 21.1.0 on the site describe the static binaries or the mirrors-clang-format pin and stay as they are. The organization profile banner gets the same change in cpp-linter/.github.
